United against waste

Our new favorite topic: avoiding food waste. We have started a major project with “United against Waste e.V.” (UaW). All food waste was weighed on all Oktoberfest operating days and the numbers were subsequently evaluated. We are now developing a strategy for dealing with the enormous amounts of food waste.

UaW operates the competence center for preventing food waste in out-of-home catering on behalf of the Federal Ministry of Food and Agriculture.

Climate

Our marquee operation is completely climate-neutral.

The voucher dispatch is plastic-free and also climate-neutral.

We have even made our guests' travel climate neutral (within a radius of 100 km from the Theresienwiese).

Through Climate Partner, we support reforestation projects in the Upper Allgäu region and the construction of environmentally friendly stoves in Peru.

Also climate neutral in 2023

Of course, Kufflers wine tent is also working climate-neutrally this year, officially certified by Climate Partner. Sophie Opitz, environmental officer in the tent, takes it with joy.

Ressourcen

Kufflers Weinzelt participates in Ökoprofit, an environmental consulting and climate protection programme run by the City of Munich. In short, this means we take various technical and organisational measures to save raw materials, water and energy, avoid waste and reduce emissions.

This goes hand in hand with raising the awareness of all employees for environmentally and climate-conscious actions. For Kuffler's Weinzelt, we cycle or e-bike wherever possible- for those who live a little further afield, electric cars are also used!


 

Regional + Seasonal

We avoid imported products as much as possible and give priority to local alternatives. This inevitably results in the seasonal offer.

We increase the range of vegetarian and vegan dishes every year. The same applies to the use of certified organic products.

  • We get our salads, vegetables, herbs and fruit from Gärtnerei Böck in Neufarn, just behind Riem.
  • Sausage and meat products come from Upper and Lower Bavaria; among others, from the Gutshof Polting Estate (lamb and game), from the Buchberghof at Tegernsee (Tegyu beef / photo Marco Schütte), or in organic quality from the Bäuerliche Erzeugergemeinschaft Schwäbisch Hall.
  • Our fish is from local waters, it grows in ponds in Markt Schwaben (Fischerei Köppelmühle) and in the Pupplinger Au in Egling (Fischzucht Aumühle im Isartal).
  • The cheese specialities ("cheese with wine"), which are in above-average demand in the wine tent, are supplied by the Ostallgäuer Feinkäserei Stich.
  • Sonja Laböck bakes the extensive bread assortment for us with her Münchner Brotmanufaktur Schmidt in Haidhausen.
  • The Dachau-based company Gerlicher supplies us with oil, which they process into sustainable biodiesel fuel after use.
  • Desserts are made for us by our in-house Spatenhaus Patisserie using regional ingredients.
  • We buy organic milk products from the Berchtesgadener Milchwerke.
  • Spices come from the Chiemgauer Gewürzmühle Rosenheim, schnapps from the Lantenhammer distillery at Schliersee.
